Herb & Flower Salad
Mixed salad leaves tossed with edible flowers, fresh herbs, lemon zest, and a light honey dressing.
Ingredients
- 100g mixed salad leaves
- A handful of edible flowers (calendula, nasturtium, or viola)
- A small bunch of fresh herbs — mint, basil, and dill work well
- Zest of 1 lemon
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp runny honey
- Salt and black pepper
Method

Whisk together the olive oil, lemon juice, and honey in a small bowl. Season with salt and pepper.

Place the salad leaves in a large bowl. Tear in the herb leaves and add the lemon zest.

Drizzle over the dressing and toss gently to coat.

Transfer to plates and scatter the edible flowers on top. Serve immediately.
